Roasted Garlic Mashed Potatoes

Serves 4

Ingredients:

4 Russet potatoes, washed and scrubbed
1/2 cup heated Milk
3 Tbs. Butter (place in milk to melt)
1 can Chicken Stock (optional if not using milk and butter)
1/2 head Roasted Garlic
Fresh Nutmeg to taste
Salt to taste
Pepper to taste

Method:
  1. It is optional to peel the potatoes.
  2. Cube potatoes and place in a saucepan. Fill with water at least two inches above the potatoes.
  3. Salt the water.
  4. Bring to a boil, and then turn to a simmer.
  5. Cook until the potatoes are tender.
  6. Drain the water. Reserve the potatoes.
  7. With a potato masher or hand-mixer whip the potatoes with the garlic and milk mixture or with stock until fluffy.
  8. Grind a little fresh nutmeg into the potatoes.
  9. Season with salt and pepper.
